yum-o!

I made some {delish} chewy, peanut buttery granola bars this weekend...
and I thought I'd share the recipe.
{I'm nice like that!}


these are so. so. SO. good!

Peanut Butter Granola Bars
{adapted from Taste of Home}

1/2c peanut butter {let's be honest, I always add extra!}
1/3c honey
1 egg
2tbsp canola oil
1 1/2 tsp vanilla {I have homemade, so I like to use lots!}
3 1/2c oats
1/2c brown sugar
3/4tsp salt
1/3c choc. chips
1/4c chopped walnuts
1/4c chopped almonds
{you could also add: coconut, pecans, flaxseed, pumpkins seeds, dried fruit...etc}

In large bowl, beat pb, egg, honey, oil, and vanilla until evenly mixed. In separate bowl, combine oats, sugar, salt, & nuts {not choc. chips!}. Mix evenly into pb mixture. Stir in choc. chips.
Pour into 13x9 buttered baking dish. Bake at 350* for 12-15 minutes; until edges are slightly golden brown. Remove and let set for a few minutes; transfer to cooling rack {which I failed to do, and ended up with 'granola chunks' more than 'bars'. my bad}. When cooled completely cut into bars and store in airtight container.

my husband would LOVE this!

i can't stand peanut butter (crazy, i know), so i might try with almond butter.

You made your own vanilla extract? How is this done??

Peanut butter...mmmm I love it...and seriously, what's up with Sam there hating on the peanut butter...we should ban her. haha (love ya Sam)
