Another person who hates chunky salsa?
I thought I was all alone in this quirk!
Because I love Ree's cooking so much and this salsa is just too wonderful not to share...
{say that five times fast!}
with a few adaptions by me.
What you need:
1/4 c. onion
1 {28 oz} can whole tomatoes
2 cans Rotel {depending on the crowd, I like to throw in Mild or Hot instead of Original}
2 cloves of garlic
1 large jalapeno
1 lime
cilantro
1/2 tsp salt
1/2 tsp cumin
1/2 tsp sugar
{bottle of wine pictured is for enjoying while making!}
Directions:
Pour tomatoes {juice and all!} and Rotel into food processor. Add onion, halved garlic cloves, quartered jalapeno {seeds and all if you like spicy!}, 1/4 cup cilatro {add more or less depending on your preference}, salt, sugar, and cumin. Cumin is the key ingredient...so don't skimp! Sometimes I double the amount if I'm feelin' crazy!
After all the ingredients are in the processor, pulse for several seconds until its the consistency you like.
Pour into large bowl, glass jars, or any other container and chill for an hour or so.
And voila!
Delicious, restaurant style salsa!

You're so right, Katie, Ree is AMAZING! I've had the ingredients for this recipe waiting for awhile now. I forgot to make it for our last taco night. :( Glad you're a fan of it. Doug is also a non-chunky salsa person, you're far from alone!
