Bars.

I'm a sucker for a good bar.
Especially a good granola bar.
Sometime last year I stumbled on Taste of Home's recipe for homemade granola bars. And I tweeked it and came up with this little baby..

PB & Chocolate Chip Granola Bars


{here's what you need: PB {or Almond butter, Sam!}, canola oil, vanilla, honey, brown sugar, choc chips, an egg, salt, oats, any any nuts/fruit/coconut you want}




In a large bowl, mix 1 egg, 1/2 cup pb, 1/3 c honey, 2 tbsp canola, and 1 1/2 tsp vanilla. Mix til creamy.


In a separate bowl, mix 3 1/2 c. oats, 1/2c brown sugar, 3/4tsp salt, 1/4c chopped walnuts, and another other dry ingredients you want. {I had coconut on hand, so I added that!}. Don't mix the chocolate chips yet...


Stir in the dry ingredients with the pb mix. Stir until well mixed.


Stir in 1/3c chocolate chips. Press into a greased large baking dish {or two 8x8's like me!} Pressed so even.



Bake at 350 for 12-15 minutes, or until top is slightly browned.
Let the baking dish cool completely on a cooling rack before cutting into bars or bite sized pieces.
