In the kitchen:: pesto chicken.


Pesto Stuffed Chicken.

I saw a recipe for it floating around on Pinterest and after realizing I only had 1/3 of the ingredients in the recipe, I made my own version of it about a month ago. Since then, we've probably had it 5 times. We love this stuff! It's seriously sooooo good.

Pesto 

Newsflash:: I'm cheap. So instead of running out and buying pesto, I made my own. I remembered seeing a recipe for spinach basil in my Family Circle mag a few years ago, but couldn't find it on the interwebs anywhere. So I made up this recipe and it seemed to work just fine! J even loved it :)

2ish handfuls of frozen baby spinach {we always keep some in the freezer for smoothies}
1/2 cup almonds {the only nuts we had on hand}
1/2 cup grated parmesan cheese
1/2 c olive oil
3/4 tsp sea salt
pinch of pepper

Blend all of the above {or whatever substitutes you use!} in a food processor or blender.

Thennn mix 2 Tbsp of the pesto  with 2 Tbsp sour cream. Add in a few pinches of shredded mozzarella. 
Set aside. 

Pound out two chicken breasts. {I may or may not use a flower-printed hammer to do this past since I don't own a meat tenderizer. Doesn't everyone?!}
Spread some pesto on each breast, roll and hold in place with toothpicks. 
Set aside. 

Mix up 1/2c bread crumbs, grated parmesan, and garlic powder. 
Dip each breast into olive oil and coat with breadcrumb mix. Bake in a greased baking dish at 375 for 30ish minutes.

Good for you for making up your own recipe. I still struggle with creating my own dishes. I'm a huge recipe follower.
