Winning {in the kitchen}

What was almost a cooking-fail yesterday
ended up being what Charlie Sheen would define as
winning

See, I was all pumped to share my awesome lasagna recipe with you.
I even started taking iphone pics of the process



{See? Brown the meat, add the sauce, stir up the cheesy goodness...}

And then, when it was all ready to put together,
I realized I only had 4 {four.} lasagna noodles.
um, excuse me? 
That seriously threw my lasagna-making plans for a loop.
seriously.

Until genius me remembered that pasta is pasta.
And I just substituted penne!
and voila! A new dish the hubby l.o.v.e.d!

totally winning.

And since you're dying to have it,
here's my lasagna (or baked penne!) recipe.


Easy Peasy, Delish Lasagna
**adapted from Kraft Foods 

Brown 1lb ground beef (I like to substitute ground turkey when I'm feeling healthy). Season with pepper, sea salt, and onion powder/chopped onions. Drain fat and stir in 26 oz (aka one jar) of spaghetti sauce and 1 c. water. 

In a medium bowl, mix 15 oz. ricotta (or cottage cheese. But I hate the stuff!), one egg, 1 1/2 c shredded mozz, 2T grated parmesan, 1/2c shredded cheddar, parsley, onion powder/chopped onions, and crushed red pepper flakes. 
{feel free to leave out any of the above! Or add anything you want to it!}

Spoon 1c meat sauce into baking dish, top with layers of lasagna noodles (or cooked penne!) and cheese mix, cover with remaining meat sauce. Bake at 350 for 40ish minutes or until bubbly (20 min. if using penne). Top with layer of shredded mozz, bake until cheese is melted. Enjoy!

{I also love to use this recipe in my crockpot. It makes it super delish! Just cook on low 4-6 hours. Ah.mazing.}
