Wednesday randoms.

because Wednesdays are just random in general, here are some of my randoms today!

One of my favorite Christmas gifts this year was this book that I gave my mom, for us to work through together. Has anyone else see this? Its such a great idea for crafty people who like to help others!

Speaking of crafts, I'm thinking of making up a couple of these cute gifts to have on hand for last minute gift ideas. And I'm just loving Ashley's blog and well, life in general. She is so crafty and stylish...and has 4 of the cutest kids!

J and I have been working on getting back into shape (along with every other new year's resoluters). Has anyone tried any Wii fitness programs and loved them? I'm trying to find some winter running alternatives...


and because everyone (most everyone, anyways) loves a cute dog...

katie - yes, your pup is cute. It's a husky, right? My son really wants a husky. Just not sure one would survive in this Alabama heat. Where do you live?

You posted on my blog about the taco ring recipes....and I don't think if I were to comment back on your post that you would see it - that's why I'm here posting on YOUR blog so you will see it. I'm technologically challenged sometimes and while some fancier blogs will email you when someone comments on your post, mine doesn't (at least I don't THINK it does).

Anyhow....the taco ring was so good and so easy, here goes:

1.5 chicken breasts (or more if you want more), cooked and shredded/chopped
1 package taco seasoning
1 cups shredded cheese
2 packages croissants

That's the basic ingredients. Warm chicken with 1/3 cup of water in a pan, add taco seasoning and simmer. Then it's up to you how you do the croissants - we broke them into the triangles laid them on the cookie sheet, filled with filling and then laid the top half the triangle on top. Then bake at 350 for 20-25 minutes.

We actually added some additional ingredients we had laying around...so next time I'd do the same by adding:

corn
black beans
cilantro

Just a little of each to give it some flavor. Not necessary, but oh, so, good!

Oh, and I forgot to say you add the cheese to the simmering chicken before you add the filling to the croissant.

katie, my dad has lost 7 lbs in the last two weeks doing just dance 2 on the wii. not sure if that's typical, but it's a riot watching him do it...and it is really fun and gets you moving! just a thought!

cute pup!! using the wii to get in shape sounds fun. we're contemplating buying a treadmill...or i just jumprope in our living room :)
