In the kitchen: chocolate chip banana muffins.




Clearly I'm obsessed with two things right now; my cake stand and chocolate chips. Judge me :)
I had some rotting overripe bananas, and decided to make some banana bread yesterday. My dilemma, though, was that I wanted it to take to school/internship in the mornings, and bread is hard to pack up in slices. After an aha! moment, I realized I could just make muffins. Genius, I know!
So anyways, here's my favorite banana bread/muffin recipe (with choc. chips added! Its super fast and easy. And if you have some rotten overripe bananas, you can always mash and freeze them and save them for another banana bread baking day!

Banana Bread/Muffin Awesomeness


1/4 c. butter
1 c. sugar
1 egg, beaten
3 mashed bananas
1 1/2c. flour
1/2 c. nuts (or chocolate chips. or both)
1 tsp. vanilla
1 tsp. soda dissolved in water

Cream butter and sugar. Add beaten egg. Add bananas, flour, nuts/choc. chips, vanilla, and soda in water. Bake at 350* for 40-50 min (or 20-30 for muffins). Enjoy!
